A new cooking method could make French fries crispier in less time while significantly limiting oil absorption. Researchers propose combining microwave heating with conventional frying. This method aims to reduce fat content without sacrificing taste or texture. The findings come from the University of Illinois Urbana-Champaign.
French fries often absorb large amounts of oil during cooking. This increases their fat and calorie content. High fat consumption can contribute to health issues like obesity and hypertension. The research team investigated whether microwave energy could help produce fries that absorb less oil.
The researchers found that microwave frying alone did not produce the desired crispy texture. Fries cooked only with microwave energy tended to remain soft. However, conventional frying provides the crunch consumers expect. The proposed system would use conventional frying for browning and crispness. Microwave energy would speed moisture removal and reduce oil intake.
This combined approach could allow manufacturers to produce fries with less oil. It would also preserve the flavor and texture of fried foods. Faster cooking could improve production efficiency. Continuous fryers in large food processing facilities could be modified to include microwave generators. These components are widely available and relatively inexpensive. This makes the system potentially practical for commercial production.
The team measured temperature, internal pressure, volume, texture, moisture, and oil content during and after cooking. They found that up to 90% of frying occurs under negative pressure. This creates a suction effect, pulling oil into the potato as water escapes. Microwave energy heats water throughout the potato, generating vapor and raising internal pressure. This higher pressure helps reduce oil penetration.
The research was published in two papers. "The Effect of Conventional and Microwave Frying on the Quality Characteristics of French Fries" appeared in the *Journal of Food Science*. "Predicting the quality changes during microwave frying of food biopolymers by solving the hybrid mixture theory-based unsaturated transport, and electromagnetics equations" was published in *Current Research in Food Science*.
