Researchers at the Physicians Committee for Responsible Medicine conducted a 16-week randomized clinical trial. The study involved adults classified as overweight. One group followed an ad libitum low-fat vegan diet, emphasizing fruits, vegetables, grains, and legumes. A control group continued their usual eating habits without dietary changes.
Neither group received instructions to count calories or limit food intake. The vegan group experienced a significant reduction in calorie intake, averaging 357 fewer calories per day. The total weight of food consumed remained largely unchanged in both groups. The energy density of food decreased by about 30 percent in the vegan group, while it remained stable in the control group.
Greater reductions in energy density correlated with lower calorie consumption and more significant weight loss. This relationship persisted even after accounting for changes in overall calorie intake. The shift away from calorie-dense animal products contributed to these changes. Increased consumption of water-rich and fiber-rich plant foods also played a role.
